2 eggs or egg whites

  • Turkey sausage, pre-cooked and sliced
  • A mix of vegetables like green & red bell peppers, onions, spinach, mushrooms, cubed sweet potatoes
  • Olive oil for cooking
  • Salt and pepper to taste


  1. Heat a bit of olive oil in a skillet over medium heat.
  2. Add the sliced turkey sausage and veggies, sautéing until the vegetables are tender.
  3. Beat the eggs and pour them over the sausage and vegetables in the skillet.
  4. Stir gently until the eggs are fully cooked.
  5. Season with salt and pepper, and serve hot.


Boil or steam sweet potato cubes until tender prior to sautéing with remaining vegetables.
