Units Scale
  • 1 cup almond flour
  • 2 large eggs
  • 1/2 cup water or unsweetened almond milk
  • 1 tbsp olive oil or coconut oil
  • 1 tsp baking powder
  • Pinch of salt
  • Optional: vanilla extract, almond extract, nutmeg, and/or cinnamon for flavor.


  1. Mix all the ingredients in a bowl until you have a smooth batter.
  2. Heat a non-stick skillet over medium heat and lightly grease it with oil.
  3. Pour small rounds of batter onto the hot skillet and cook until bubbles form on the surface, then flip and cook the other side until golden.
  4. Serve with a dollop of nut butter or a drizzle of low-carb syrup.


I found that adding the zest of one lemon, vanilla and almond extract paired with blueberries elevates the flavor.
