Ingredients

Kale and Quinoa Salad:

  • 1 cup cooked quinoa
  • 2 cups chopped kale, stems removed
  • 1 avocado, diced
  • 1/4 cup toasted almonds or walnuts
  • Salt and pepper to taste

Lemon Vinaigrette

  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 1 teaspoon mustard
  • 1 teaspoon honey or a pinch of stevia
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked quinoa, chopped kale, and diced avocado.
  2. In a small bowl, whisk together the olive oil, lemon juice, mustard, honey or stevia, and season with salt and pepper.
  3. Pour the dressing over the salad and toss well to coat.
  4. Sprinkle toasted nuts on top before serving.
