Growing up in South Carolina, we did not allow any canned “jelly” on our holiday tables. My aunt Zelia still makes the best spiced cranberry sauce. It’s the dish everyone reaches for twice. Aunt Zelia makes hers in a baking dish, not on the stovetop, and the whole kitchen would fill with the smell of orange and cinnamon. Patience is key while the sauce bakes low and slow. She prepares many jars of the sauce, enough for everyone to enjoy all year long.

Unlike the cranberry sauce that thickens fast in a pot, this baked version gives the berries time to open up and soak in the citrus and warm spices. The result is glossy, bright, and layered, with just enough sweetness to balance the tart.

If you love a table that feels intentional, this one pairs beautifully with cranberry goat cheese crostini to start and a cranberry champagne cocktail in hand. Keep scrolling for the full recipe, plus my make-ahead tips for a calmer holiday morning.

Description

This spiced cranberry sauce bakes low and slow with orange, cinnamon, cardamom, and ginger until it turns glossy and bright. It is make-ahead friendly and tastes even better after a few days in the fridge, the kind of elevated holiday side that comes together with almost no hands on time. Serve it with turkey, ham, or spooned over baked brie.

Ingredients

Base Sauce

  • 12 oz fresh cranberries

  • 1 cup granulated sugar

  • Juice of 1 orange (about 2 tablespoons)

  • Zest of 1 orange

  • 2 tablespoons orange liqueur-Cointreau or Grand Marnier

Twist Additions

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground cardamom

  • 1/4 teaspoon ground ginger

  • 1/2 teaspoon pure vanilla extract

  • Pinch of fleur de sel (optional, enhances balance)

Instructions

  1. Preheat oven to 325°F (165°C).

  2. Combine ingredients: In an 8-inch square baking dish, add cranberries, sugar, orange juice, orange zest, cinnamon, cardamom, and ginger. Stir gently to coat the berries.

  3. Cover with foil and bake for 45 minutes, stirring once halfway through, until the cranberries soften and release their juices.

  4. Remove from oven. Stir in vanilla, orange liqueur, and fleur de sel.

  5. Cool completely before serving. The sauce will thicken as it cools.

  6. Store covered in a glass jar and refrigerate for up to two weeks. Serve at room temperature or slightly warmed.

Notes

Serve in a white or glass bowl to highlight the jewel-toned cranberries.

Garnish with a twist of orange peel or a sprig of rosemary for a clean, elegant finish.

Pairs beautifully with roasted turkey, chicken, or even atop baked brie.

The Story Behind This Spiced Cranberry Sauce

Every family has the dish that everyone anticipates with much glee at the dinner table. In our house it was my aunt Zeila’s cranberry sauce, baked in a white dish.  She made large amounts an placed them in jar, so we all had a stash for ourselves until the next holiday season. She was right. Baking gives the berries room to soften slowly, roast and soak up the orange and spice, unlike stovetop sauce, where boiling leads to evaporation of flavor quickly.

I have carried that dish into my own home, adding a little cardamom and a splash of orange liqueur over the years. It is the thing my guests ask about first, usually before they sit down. There is something about that deep ruby color in a pretty bowl that signals the season has truly begun. This is the recipe I make every single year, and the one I hope becomes part of your table too.

Why This Spiced Cranberry Sauce Works

  • Baking softens the berries gently, so they stay glossy and mostly whole rather than breaking down into a flat jam.
  • Orange juice and zest accentuates the tartness, while cinnamon, cardamom, and ginger add warmth without overwhelming the fruit.
  • A splash of orange liqueur stirred in at the end lifts every other flavor.
  • It thickens beautifully as it cools, so there is no cornstarch and no guesswork.
  • It is genuinely make ahead, which means one less thing on your stovetop the morning of the meal.

The Warm Winter Spices That Set It Apart

The spices are where this sauce goes from good to unbelievable.  Cinnamon brings comfort, cardamom adds a floral, almost citrusy depth, and a whisper of ginger keeps everything popping. Vanilla stirred in at the end rounds off the flavor.

Quality matters more than you might think with so few ingredients. I use Maison Gabrielle spices, sourced and blended in Paris, because fresh, well balanced spices add warmth and sophistication instead of outdated spices. Use code JUSTJEANNIE for 10 percent off if you want to try them.

How to Make Spiced Cranberry Sauce Foolproof

Fresh cranberries in a white baking dish before baking
Start with fresh cranberries spread in a single layer.
  • Spread the cranberries in a single layer so they cook evenly. An 8-inch square dish is ideal.
  • Cover tightly with foil. The trapped steam softens the berries and keeps them from drying out.
  • Stir once at the halfway mark. You will hear the berries start to pop, which is exactly what you want.
  • Do not skip the cooling step. The sauce looks thin straight out of the oven and thickens as it rests.
  • Taste before serving. Cranberries vary in tartness by the season, so add a touch more sugar if yours are especially sharp.

Give it a gentle stir halfway through so the berries soften evenly.

After baking, add the vanilla, orange liqueur, and flour de sel, so the cooking process will not destroy their bright flavors.

Prefer the Stovetop?

Short on oven space? In a saucepan over medium heat, combine the cranberries, sugar, orange juice, zest, and spices. Cook about 10 to 12 minutes, stirring often, until the berries burst and the sauce thickens. Remove from the heat and stir in the vanilla, orange liqueur, and fleur de sel. The flavor is a touch tarter than the baked version, but still lovely.

Make Ahead and Storage Tips

  • Make ahead: Prepare it up to 3 days before serving. The flavors deepen as it rests.
  • Refrigerator: Store covered in a glass jar for up to 2 weeks.
  • Freezer: Freeze in an airtight container for up to 3 months. Thaw overnight in the fridge and stir before serving.
  • To serve: Bring to room temperature or warm gently, and stir to redistribute the juices and spices.

Serving and Pairing Ideas

This spiced cranberry sauce belongs next to roasted turkey, but it does so much more. Spoon it over baked brie, layer it onto a leftover turkey sandwich, or set a small bowl on your cheese board for a bright pop of color and acidity. For an easy, elevated start to the meal, serve it alongside cranberry goat cheese crostini. And because the holidays call for something in hand, pour everyone a cranberry champagne cocktail while the table comes together. The same warm spices show up in my pomegranate apple cider, so make the two together and the whole house smells like the holiday before anyone arrives.

What You'll Need (Tools and Equipment)

  • An 8-inch square baking dish for even, gentle cooking.
  • A fine microplane or zester for the orange zest.
  • A wooden spoon for stirring.
  • A glass storage jar so it keeps beautifully in the fridge.
  • A pretty serving bowl to show off that jewel red color..

Spiced Cranberry Sauce (Easy Make Ahead Recipe)

What is the difference between cranberry sauce and cranberry relish?

Cranberry sauce is cooked, which gives it a smooth, glossy, spoonable texture. Cranberry relish is usually raw, made by pulsing fresh cranberries with citrus for a chunkier, brighter bite. This recipe is a baked sauce, so you get that rich, jammy texture with the berries still mostly whole.

What spices go in cranberry sauce?

Warm winter spices work best. This spiced cranberry sauce uses cinnamon, cardamom, and ginger, with a little vanilla stirred in at the end. Fresh, well balanced spices make the biggest difference in a recipe this simple.

How far in advance can you make cranberry sauce?

Up to 3 days ahead, and it actually tastes better for it. The flavors meld and deepen as it rests in the refrigerator, making it one of the best make ahead dishes on the holiday menu.

Can you freeze cranberry sauce?

Yes. Freeze it in an airtight container for up to 3 months. Thaw overnight in the refrigerator, then stir well and bring to room temperature before serving.

How long does cranberry sauce last in the fridge?

Stored covered in a glass jar, it keeps for up to 2 weeks in the refrigerator. Give it a stir before serving to redistribute the juices and spices.

Is cranberry sauce served hot or cold?

This sauce is best at room temperature or gently warmed. It is never served piping hot, and the flavors are most balanced once it has had time to rest and cool.
