Growing up, one of my favorite treats was the fruit pizza my mom made for me and my brothers. We absolutely loved it! The best part was that we could help her make it, and of course, it was all about the cookie crust. We’d run into our local grocery store and grab the Pillsbury sugar cookie dough. I remember slicing off a section of the dough log just to eat raw—such a delicious memory!

Pressing the cookie dough into the pan and letting it bake filled the house with an aroma that brought early Christmas vibes. As the cookie crust baked to perfection, my mom would cut up a variety of fruits: peaches, blueberries, strawberries, grapes, and kiwis. Our mouths would water in anticipation as she prepared the toppings.

The cream cheese filling was the perfect blend of sweetness and tanginess. Once the crust cooled, my mom would spread the creamy filling over the top and arrange the colorful fruits in beautiful patterns. After a quick chill in the fridge, she would cut the pizza into slices, and we’d enjoy it by the pool on hot summer days.

Ingredients: For the Sugar Cookie Crust:

  • 1 (16.5 oz) package of refrigerated sugar cookie dough

For the Cream Cheese Topping:

  • 8 oz cream cheese, softened

  • 1 cup Cool Whip (whipped topping)

  • 1/4 cup granulated sugar

  • 1 tsp vanilla extract

  • 1 cup of sliced fresh Strawberries
  • 1 cup of fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-inch pizza pan or a large baking sheet.
  2. Press the sugar cookie dough evenly into the prepared pizza pan, ensuring the thickness is consistent. Bake for 12-15 minutes or until the edges are lightly golden. Allow the cookie crust to cool completely.
  3. While the crust is cooling, prepare the cream cheese topping. In a large bowl, beat the softened cream cheese, Cool Whip, sugar, and vanilla extract until smooth and well combined. If you’re adding lemon curd or another flavoring, mix it in now.
  4. Once the cookie crust has cooled, spread the cream cheese topping evenly over the crust, leaving a small border around the edges.
  5. Time to get creative with your fruit toppings! Use strawberries, blueberries, or your favorite fruits to create a beautiful and delicious design. Feel free to mix and match your favorites or create a themed fruit pizza for special occasions.
  6. Chill the fruit pizza in the refrigerator for at least 30 minutes to allow the topping to set. Slice, serve, and enjoy!
