One of my first memories as a young child growing up in South Carolina is how my grandmother’s dinner rolls melted into my mouth. Those rolls were buttery, moist, light, and soft. I never could eat one roll; those dozens or so rolls ended up in my tummy. Rolls were more important than the main courses of my dinner, which included dessert.
I was delighted when my grandmother one day decided that I was old enough to learn how to make the family’s dinner rolls. I learned that her grandmother taught her as well, and the way to make the rolls had been in the family for countless generations. I now have a daughter, who has also learned to make these “to die for” dinner rolls.
Here’s the “modified” family recipe for my grandmother’s dinner rolls. Of course, I have to keep some key details secret, but the rolls from this recipe will put smiles on your dinner guests’ faces.

Ingredients
- 1 1/2 cup 110F warm whole milk
- 4 Tbsp unsalted butter, melted
- 1 Tbsp active dry yeast
- 1/3 cup granulated sugar
- 1 1/4 tsp salt
- 4 cups all-purpose flour, minus 3 tbsp
- 1 Tbsp unsalted butter
- 1/2 tsp kosher salt
Instructions
- Using a mixer, whisk together warm milk and 1 Tbsp of sugar in the mixer bowl. Sprinkle the top of the mixture with 1 Tbsp yeast an let sit 1 minute. Whisk together and let it sit for about 5 minutes until yeast looks foamy. Add 4 Tbsp melted butter as well as the remaining sugar and salt.
- Add flour to the mixture a half cup at a time. Once the dough becomes thick, switch to a dough hook attachment and mix on speed 2. 4 cups of flour will be added except for the last 1 to 3 Tbsp, unless needed. The dough should feel sticky and tacky but should not stick to clean/dry finger tips.
- Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand for about 6 minutes. Then place dough in an oiled bowl. Cover it with plastic wrap and let it rise for about 2 hours in a warm place or until doubled in size.
- Once dough rises, place it onto a floured surface and cut it into 15-24 pieces. Roll each piece of dough into a ball and place on a buttered 9×13 casserole dish or baking sheet.
- Cover the dinner rolls with plastic wrap and let hem rise another 30-60 minutes in a warm place or until puffed. Bake at 375F for about 20 minute or until the tops are golden brown.
- Immediately brush butter on the tops of the warm rolls and sprinkle salt if desired.
