Summer Vegetable Pasta

Ingredients
- 2 cups of pasta (I used penne, but feel free to use your favorite)
- 2 tablespoons olive oil
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 bell pepper, sliced
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Pasta First: I kicked things off by cooking the pasta according to the instructions on the packet.
2. Sauté Time: While the pasta was cooking, I heated the olive oil in a large sauté pan over medium heat. I tossed in the zucchini, yellow squash, and bell pepper slices, cooking until they started to soften.
3. More Goodness: Next, I added the cherry tomatoes and the minced garlic to the pan, letting everything cook until the tomatoes began to burst. The aroma was just incredible!
4. Bring It Together: Once my pasta was perfectly al dente and drained, I added it to the pan of beautifully sautéed veggies.
5. Toss It Up: Then came the fun part – tossing everything together! I sprinkled in the fresh basil and parmesan cheese and gave everything a good mix. The basil’s freshness paired beautifully with the savory parmesan.
6. Season and Serve: Finally, I seasoned my creation with salt and pepper, gave it one final stir, and there it was, my perfect Summer Vegetable Pasta, ready to be devoured!
Notes
Grilling the vegetables on a grill adds an extra summer flavor, especially if you use wood chips.
