Description
Enjoy a hearty roasted vegetables recipe with lentils and kale. Full of flavor, healthy ingredients, and perfect for a cozy, nourishing home-cooked meal.
Ingredients

1 cup dried green or brown lentils, rinsed

2 medium carrots, peeled & diced

2 celery stalks, diced
-
1 medium onion, diced
-
3 garlic cloves, minced
-
1 can (14 oz) diced tomatoes (fire-roasted preferred)

2 Tbsp olive oil (divided)
-
1 tsp ground cumin
-
1/2 tsp ground turmeric
-
1/2 tsp ground coriander
-
1/2 tsp smoked paprika
-
1 tsp dried thyme
-
6 cups vegetable broth (or chicken broth if preferred)

1 bay leaf
-
2 cups chopped kale (stems removed)

Salt & pepper, to taste
- 1 Tbsp lemon juice (optional)
- Fresh parsley, for garnish
Instructions
Roast the Veggies
- Preheat the oven to 400°F (200°C).
- Toss carrots and celery with 1 Tbsp olive oil, salt, and pepper on a sheet pan.
- Roast 15–20 minutes, stirring once, until tender and golden.
Start the Soup Base
- Heat remaining 1 Tbsp olive oil in a large pot over medium heat.
- Cook onion for 5 minutes until softened.
- Stir in garlic, cumin, turmeric, coriander, smoked paprika, and thyme; sauté 1 minute until fragrant.
Build the Soup
- Add lentils, roasted carrots + celery, diced tomatoes, broth, and bay leaf.
- Bring to a boil, then simmer for 20–25 minutes until lentils are tender.
Add Kale and Finish
- Stir in kale during the last 5 minutes of cooking until wilted.
- Remove bay leaf, add lemon juice if using, adjust seasoning.
Serve and Enjoy
- Ladle into bowls, garnish with fresh parsley, enjoy with warm rustic bread.

For a thicker, creamier soup, blend 1–2 cups and stir back in before adding kale.
