The Ultimate Heirloom Tomato Soup Recipe

  • 68 large tomatoes (Heirloom, Vine-ripe, Roma, or your choice)
  • 1 large red bell pepper
  • 1 large sweet onion
  • 1 purple onion
  • 1 whole garlic
  • 1/2 cup of olive oil, plus one tablespoon for garlic
  • Salt and pepper to taste
  • 4 sprigs of fresh thyme
  • 4 cups of vegetable broth
  • Optional garnish: crème fraîche and chives

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Cut the tomatoes, bell pepper, and onions into large chunks. Place them in a roasting pan, sprinkle with salt, pepper, and fresh thyme.
  3. Cut the top off the whole garlic, drizzle with a tablespoon of olive oil, wrap in foil, and place on a sheet pan.
  4. Roast the vegetables and garlic in the oven for about 35 minutes, or until tender and slightly caramelized.
  5. Remove the roasted vegetables and garlic from the oven. Squeeze the roasted garlic out of its peel and add it, along with the vegetables and any juices from the roasting pan, to a blender or food processor. Blend until smooth.
  6. Pour the pureed mixture into a pot. Add 2 cups of vegetable broth and simmer. Adjust thickness and texture by adding more broth as desired.
  7. Serve the soup in bowls, garnished with crème fraîche and chives if you like.
