A bowl of homemade tomato soup garnished with chives and a croton.

Ah, the timeless charm of tomato soup – it’s more than just a meal; it’s a warm embrace from the past. Growing up, tomato soup was the heart of our family’s comfort food repertoire, a tradition lovingly prepared by my mom. I still vividly remember coming home from school to the comforting aroma of roasting tomatoes and garlic wafting through the house, signaling that something special was waiting just for us. As the soup simmered, its scent filled every corner, transforming our kitchen into a cozy sanctuary of love and warmth.

The moment my mom ladled that rich, velvety soup into our bowls was nothing short of magical. Eager and impatient, I was always the first to reach for a crouton, dipping it into the soup, savoring that first, perfect bite. It was in those moments, amidst laughter and gentle scoldings to wait until everyone was served, that my love for tomato soup was sealed. This recipe isn’t just a collection of ingredients; it’s a tribute to those cherished memories, a way to bring a piece of my childhood into every spoonful. So, come join me on this nostalgic journey, and let’s recreate the magic of simple, heartwarming flavors together.

  • Cook Time: 45
  • Total Time: 1 hour
  • Yield: 6-8 1x
  • Category: Soup
  • Cuisine: Americann

Ingredients

Units Scale
  • 68 large tomatoes (Heirloom, Vine-ripe, Roma, or your choice)
  • 1 large red bell pepper
  • 1 large sweet onion
  • 1 purple onion
  • 1 whole garlic
  • 1/2 cup of olive oil, plus one tablespoon for garlic
  • Salt and pepper to taste
  • 4 sprigs of fresh thyme
  • 4 cups of vegetable broth
  • Optional garnish: crème fraîche and chives

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Cut the tomatoes, bell pepper, and onions into large chunks. Place them in a roasting pan, sprinkle with salt, pepper, and fresh thyme.
  3. Cut the top off the whole garlic, drizzle with a tablespoon of olive oil, wrap in foil, and place on a sheet pan.
  4. Roast the vegetables and garlic in the oven for about 35 minutes, or until tender and slightly caramelized.
  5. Remove the roasted vegetables and garlic from the oven. Squeeze the roasted garlic out of its peel and add it, along with the vegetables and any juices from the roasting pan, to a blender or food processor. Blend until smooth.
  6. Pour the pureed mixture into a pot. Add 2 cups of vegetable broth and simmer. Adjust thickness and texture by adding more broth as desired.
  7. Serve the soup in bowls, garnished with crème fraîche and chives if you like.

Notes

Tips for Perfect Tomato Soup:

Choose Your Tomatoes Wisely: The variety of tomato you use can drastically change the flavor profile of your soup. Experiment with different types to find your favorite.

Roasting is Key: Roasting the vegetables deepens their flavors, adding a rich, caramelized complexity that can’t be achieved any other way.

Smooth or Chunky: Whether you prefer your soup velvety smooth or with a bit of texture, adjust the blending time to suit your taste.

Freezing Tips: This soup freezes beautifully. Cool it down completely before freezing in airtight containers. Perfect for a quick and cozy meal later.

Repurpose Like a Pro: Leftover soup makes a fantastic base for tomato sauces. Use it for a quick lasagna or spaghetti sauce for a flavorful twist.

Pairing Suggestions:

Enhance your dining experience by pairing this luxurious tomato soup with homemade croutons, a melty grilled cheese sandwich, or a crisp, green salad. Each addition brings its own unique texture and flavor, complementing the rich and creamy soup for a balanced meal.
