Description
A medley of roasted root vegetables and Brussels sprouts, glazed in a subtly sweet, herb-forward dressing that brings color and warmth to your Thanksgiving table.
Ingredients
- 2 cups carrots, peeled and cut into 2-inch pieces
- 2 cups sweet potatoes, peeled and cubed
- 2 cups Brussels sprouts, trimmed and halved
- 1 cup parsnips, peeled and cut into sticks
- 2 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- Salt and black pepper, to taste
- 1/4 cup pomegranate seeds, for garnish
- Optional: 1 tbsp toasted pecans or walnuts
Instructions
- Preheat the oven to 400°F (200°C). Line two large baking sheets with parchment paper.
- Prepare the glaze: In a small bowl, whisk together olive oil, maple syrup, balsamic vinegar, Dijon mustard, thyme, salt, and pepper.
- Toss the vegetables in a large bowl with the glaze until evenly coated. Spread in a single layer on the baking sheets.
- Roast for 30–35 minutes, flipping halfway through, until the vegetables are tender and caramelized at the edges.
- Garnish with pomegranate seeds and toasted nuts before serving.

Roast the vegetables earlier in the day and reheat at 350°F for 10 minutes before serving. The glaze deepens in flavor as it sits.

Creamy, savory, and elegantly spiced — this gratin offers the perfect balance of comfort and sophistication.
Ingredients
- 3 large sweet potatoes, peeled and thinly sliced (1/8-inch thick)
- 1 1/2 cups heavy cream
- 1 garlic clove, minced
- 1/2 tsp nutmeg (freshly grated, if possible)
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
- 3/4 cup grated Parmesan cheese (divided)
- 2 tbsp butter, cut into small pieces
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9-inch or round baking dish with butter or cooking spray.
- Infuse the cream: In a small saucepan, heat heavy cream with garlic, nutmeg, thyme, salt, and pepper over low heat for 5 minutes. Do not boil.
- Layer the potatoes: Arrange half the sweet potato slices in the baking dish, slightly overlapping. Pour half of the cream mixture over the layer and sprinkle with ¼ cup Parmesan. Repeat with the remaining potatoes, cream, and cheese.
- Top with butter and remaining Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 20–25 minutes, until golden brown and bubbly.
- Rest 10 minutes before serving for the layers to set.

For the Poached Pears:
- 3 ripe but firm pears, peeled and halved
- 2 cups orange juice
- 1 cup water
- 1/4 cup honey
- 1 cinnamon stick
- 2 star anise pods
For the Salad:
- 6 cups butter lettuce or mixed greens (not arugula-based)
- 1/2 cup crumbled feta or goat cheese
- 1/4 cup chopped walnuts, toasted
- Optional: 2 tbsp dried cranberries for extra color
For the Vinaigrette:
- 3 tbsp olive oil
- 2 tbsp white balsamic vinegar (or apple cider vinegar)
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1 tsp orange zest
- Salt and pepper, to taste
Instructions
- Poach the pears: In a medium saucepan, combine orange juice, water, honey, cinnamon stick, and star anise. Bring to a gentle simmer. Add pears and cook for 10–12 minutes, flipping once, until just tender. Cool and slice thinly.
- Make the vinaigrette: In a small bowl, whisk together olive oil, vinegar, honey, Dijon mustard, orange zest, salt, and pepper.
- Assemble the salad: Arrange lettuce on a serving platter. Top with sliced pears, feta, walnuts, and cranberries if using. Drizzle with vinaigrette just before serving.
